I just got home, about 25 minutes ago. Went out for dinner at a yummy restaraunt, in Boise, with
substance212,
kleme,
thomturtle,
nefertem_ammon, and
patra. I ordered the most delicious chicken curry! I was so happy they had it.. I hadn't had a good curry (one of my favorite foods) since I moved to Idaho. If anybody has a good recipe (when I say good, I mean spicey, spicey, SPICEY), send it my way, so I can make some myself.
I took most of my meal to go though, since I was having to eat in front of the most beautiful girl in Boise. That made it a bit difficult =-)~
Anyway, I'm going to go play with my kitties.

One can of coconut milk
One pound of chicken
4 Tablespoons of Curry powder (found in the bulk section, adjust to taste)
a pinch or two of ginger (more if you like it spicy!)
1 cup of sugar (I use white, but if you use brown, use less)
opt:
frozen broccoli/cauliflower or fresh cut pieces of mushrooms/onions( <-- my fave combo)
thai seasoning
noodles or rice
1. First cut the raw chicken in cubes. Set aside.
2.Mix in the coconut milk, sugar, curry seasoning, ginger (and thai if you want) into a skillet. Mix well and bring to a boil, stirring occasionally so the base doesn't burn.
3. Throw in the raw chicken pieces and turn down to medium heat. Stir every five minutes. Check the chicken in about 30-45 min. if chicken is not cooked, check every 5-10 min. until it the chicken is cooked.
4. (Optional)When the chicken is cooked add veggies, and stir. Cook until the veggies are hot.
5. Serve plain or over noodles/rice.
